This hits home. My mother has celiac and it’s very severe. She has been hospitalized too many times to count. She was diagnosed close to 20 years ago now, which is amazing since “gluten” and “celiac” were not commonly heard of back then. Even back then I suspected there was an autoimmune component to it based on her symptoms. Food education and reform need to happen quickly in this country. It’s awful. Thanks for sharing this article.
